INGREDIENTS

1/4 c canola oil
1 tsp mustard seeds
1 tsp cumin seeds
1/2 tsp turmeric
2 small onions
3 green chillies
2 cloves garlic
1/3 c shredded coconut (fresh or frozen)
1 stem curry leaves
1 small green, unripened papaya*
salt to taste

INSTRUCTIONS

*To prepare papaya for this recipe, peel, cut in half, remove seeds and pulse in food processor to get very small pieces, but do not puree.

Heat oil in pan on medium-high heat. Carefully add mustard seeds as they will begin to pop in the hot oil. Immediately cover until the popping stops.

Add cumin seeds, turmeric, onions, chillies, and garlic. Saute until onions are translucent.

Lower heat and add coconut and curry leaves.

Add papaya and salt. Saute then turn to very low heat and cover. Leave for 5-10 minutes until papaya is cooked through and soft.

Serve with parboiled rice.
